Late August is the perfect time to dine outdoors and enjoy the end of summer! What better way than with Chefs JB and Zach of the Bloom & Rose and “vaguely traditional, weirdly delicious” cuisine.
We’ll start in the gardens…
Be greeted to Crown Hill Farm by Missy Singer DuMars with a tour of the farm and see what is in season in the gardens. Learn about how the market gardens are tended with no-till/low-till practices to preserve soil and support delicious, nutrient-rich foods.
Discover the unique vegetable varieties we grow - chosen for flavor, color, joy & regional adaptability. Hear a bit of the rich history of Crown Hill Farm, from its farmhouse to its multiple owners— as varied as what the gardens now grow!

After enjoying the garden tour, visiting the animals and relaxing with our beautiful views, sit down and prepare for your senses to be delighted in the most unexpected ways…
Relax amongst the orchards and grounds surrounded by the sounds of farm life (our chickens, ducks, geese and sheep.)
The Chefs of Bloom and Rose give us a one-of-a-kind menu bringing their love of deli culture fortified by an obsession with world cuisine all together in a culinary adventure for your taste buds “worthy of its own comic book.”
Chefs Zach and JB will demonstrate their wild array of skills food passions featuring Crown Hill Farm vegetables, eggs and edible delights along with meats, dairy and treats from nearby farm friends.
Enjoy this feast-for-the-eyes, multi-course meal on the farm and experience all the delicious ways that the foods you just saw in the gardens can become the stars in your meal. Take in the beauty of the farm-life atmosphere amongst a community of food lovers as Missy, Zach & JB share about each course in addition to the regional wine pairings chosen for the evening’s meal by Chateau Niagara Winery.

About Bloom & Rose: What happens when you place an immovable object up against an unstoppable force? Chef Zach Rosenbloom and Chef JB Pagels of the Bloom and Rose. Zach Rosenbloom, a collector of fine cookbooks, traditional culinary techniques and unrivaled palette of spices found an unlikely coupling with Jb’s pirate smile, tattooed forearms, and power to make anything and everything a comfort food. Surely this combination of personality would clash but instead the Bloom and Rose (specializing in artisan deli fare) has demonstrated a wild array of skills of several cuisines and culinary delights without rival.
JB “Bearcat” Pagels is one the many unsung hometown talents of the Buffalo food scene. Working his way up from part time dish maestro to the ever underappreciated role of sous chef at some of the best restaurants of Buffalo's culinary rebirth during the 2010’s. JB studied his craft at restaurants like torches and Tsunami (the Mike Andrzejewski precursor to Seabar). After he established a solid base of skill JB’s journey took him to the doors of Park Country Club where the duo finally met.
Park Country Club has gained a reputation for producing some of the best chefs of our area which is exactly why Zach Rosenbloom at the time; a recent graduate of Ohio State University found his way under the tutelage of Chef James Roberts. As Zach gained confidence and skill, he desired a more unique style to add to the classic skills built from PCC. He set his eyes on restaurant Gaggan (top 7 restaurant in the world at the time) which specialized in modern indian cuisine in the heart of Bangkok, Thailand. Zach applied for one of the few coveted internships offered and was accepted to participate in a three month stage. While in Bangkok, Zach was able to immerse himself in the culture and cuisine of Thailand just as much as Gaggan’s inspirational style.
After many adventures forged, JB and Zach found themselves putting together the pieces of what has now become their grassroots built, smack you in the face (with love) culinary personality called the Bloom and Rose. They have taken their love of deli culture and fortified it with an obsession of world cuisine. You can now find Jb and Zach sharing their distinctive style of culinary fare at many farmers markets throughout Buffalo and surrounding areas, with plans to open a brick and mortar restaurant summer of 2024.
