In honor of the month of August as the 100th anniversary of women’s suffrage, we’ve partnered with Yelp to co-host Women in Food of WNY.

I’m really thrilled to be offering this first version of Women in Food of WNY as a free virtual series. It is the kickoff to a BIG vision of I have for live events featuring women chefs, bakers, cooks, farmers and food makers of WNY. There’s a lot of us business women here in the regional food scene that I think are worth knowing about and enjoying their creations!

Ingredients:

For Sukuma Wiki

1 large bunch of kale or collard greens, stems removed, and cut into ribbons or large bite-sized pieces (cooks down alot!)
3 medium tomatoes diced
2 teaspoons minced or crushed garlic 1 large onion
2 or more tablespoons canola or cooking oil
1 Tablespoons paprika
1/2 teaspoon coriander
1/2 teaspoon curry or turmeric spice
1/2 teaspoon cayenne pepper or more to taste
1/2 juiced Lemon (about 1 tablespoon)
1 Tablespoon bouillon powder or cube
Salt and Pepper to taste

For Lu Dan (Marinated Egg)

6 eggs
3 cloves garlic, crushed
1 tablespoon of ginger root, sliced
4 whole star anise
¼ cup soy sauce
½ tsp five spice powder*
1 tablespoon sesame oil
1-2 bay leaves
Pinch of black pepper
Pinch of salt
1 tsp brown sugar (optional)
1-1.5 lbs chicken wings (optional)

*If you can’t find five spice powder or star anise, sprinkle in a small amount of any or all of the following: Ground Cinnamon/Cinnamon sticks, Fennel seeds, Cloves,Szechuan peppercorns
