Join me (Missy) along with Alex Levine from Yelp, as your hostess & host for this Virtual gathering of the Women in Food of WNY. In this Free Class with Jill Gould, owner of Butter Meat Co., she’ll de-mystify the mixed messages about meat out there to equip us to make the best choices possible for our meat consumption.

Discussions about beef are all over the place these days, covering impact on the environment, health concerns, animal welfare, ethics and more. What isn’t often discussed are the subtleties to where our beef comes from and the wide range of ways that it can be raised which make a HUGE impact on the meaning of the statistics and data. Jill Gould, in a mission to provide a sustainable, mindfully sourced WNY-grown beef has created the Butter Meat Co and thus brought together the dairy and meat industries to create a great product that is also kind. In this episode, Jill will answer all your beef and meat questions as well as teach us how to cook a small Beef Roast.

Along the way, I’ll be asking her questions and chatting about her food and farm journey, being a woman in food in WNY and whatever spontaneously comes in our shared storytelling. I’ll also share some bits about Crown HIll Farm and my own passion for food and YOU will have a chance to ask questions as you follow and enjoy along with us!

Whether you cook along with us or just sit at the “table” and enjoy the conversation, I’m sure you’ll learn a few new things to inform your personal meat choices. About Jill Gould: Jill Gould, after marrying Steve Gould, a third generation dairy farmer at Har-Go Farms in Pavilion, saw a way to utilize something the region has in abundance: culled dairy cows. Instead of sending these cows to auction, Jill has started processing them and dry aging the steaks, selling them alongside burgers and dog bones at pop-ups under her Butter Meat Co. label.

Jill started Butter Meat Co. because she believes in the hard work of our agricultural community in Western New York and the pleasure of experiencing delicious food. Her mission is to bring both of these directly to you.

The name Butter Meat Co. is a direct reference to the positively scrumptious dairy products and flavorful beef she produces. Why start Butter Meat Co.? Well, she had a few different food supply chain jobs- she worked at her family’s farm, sourced produce for Walmart, and was on the supply chain team at Blue Apron. Jill brings this combined experience of working on her family's farm and in the corporate food supply chain to rethink local food. While still a small operation, Jill hopes to ultimately have the capacity to expand beyond her own farm’s cows with their newly opened a retail space and shipped meat.

About the Women in Food of WNY series: Being a solo Woman Farmer and Woman Entrepreneur I have always kept my eye out for fellow women in business with whom to connect (and commiserate). As i’ve established myself in the WNY area, I have loved meeting new chefs and farmers alike. However, one thing that I noticed was a serious lack in attention towards women Chefs and Farmers of the region, despite the fact that there are many of us. Here at Crown Hill Farm, we love to host Farm-to-Table dinners featuring local chefs preparing seasonal foods. From there, I saw a vision: A series of dinners highlighting the women chefs of WNY. Now, in 2020 with COVID keeping us all away from social gatherings in person, I had to get creative while hanging on to this vision of featuring women in food in WNY. And so, after many conversations with incredible women, this series was born! This is the first step to what I hope will be a Conference of WNY Women in Food. For now, let’s gather around our respective kitchens to chat, cook and learn together.
